Get cooking with GFCF pancakes

One of the first recipes people cooking on a gluten-free casein-free diet look for is pancakes. I’m not sure why that is, but it’s true. I found my first gfcf pancake recipe at the GFCF Recipes website at http://www.leewebshop.com/gfcfrecipes/index.htm.

I’ve since modified that recipe, several times, and found one that works best for me. Still, check out the website and you’ll find a ton of great, simple recipes to start out with.

  • GFCF flour mix: 2/3 cup sorghum flour, 1/3 cup tapioca starch
  • 2 tbsp sugar
  • 2 tsp baking powder
  • 1 tsp salt
  • 2 tbsp applesauce
  • 1 tsp cinnamon
  • 2 tbsp oil
  • 1 tbsp ground flax seed
  • 1/3 cup CF milk or water
  • 2-3 tbsp more liquid, CF milk or water

Note, I do not use egg or an egg substitute in the recipe, nor do I use xanthan gum. The recipe works fine.

Combine the dry ingredients, then the wet. Mix the batter with a whisk.

Add some oil to a pan and pre-heat. If they become sticky in the pan, add more oil in between pancakes.
